I can build most of it, but not the fish, and that is the half that matters. The Tuesday menu still has three plancha slots open, so ordering fish now means ordering against a guess. Everything on the spine I have costed and drafted: meat for the braise (Lowcountry, order by Monday 4pm), produce, dairy, dry goods. That is ready to send. Two flags. Tybee has invoiced above their verbal quote twice this month — $14.50 quoted, $16.20 billed on the snapper — so I would get Friday's price in writing before anything goes in. And the book already shows 82 for Friday, which is at the top of the normal range; last time we hit 82 we ran short on the raw bar.
